Shrimp ceviche wrap with fresh mixed greens and a spicy sesame cream dressing
What you need
tortillas
mixed greens
5 raw, peeled and halved shrimp (de veined)
1 lemon (juiced)
1 small onion (diced)
chile flakes (go to Mexican store and ask for Chile pequin)
1 cup mayo
2/3 cup of Sirracha spicy sauce (the cock sauce)
1/2 cup of sesame oil
1/2 cup of teriyaki sauce

Directions:
put the shrimp, onions and pepper flakes in a small bowl
add salt and black pepper if you want
cover the shrimp with lemon juice
wrap the bowl with plastic and let it set in the fridge for at least 30 min so the acid form the lemon can cook the shrimp
(you want the shrimp to go from translucent to white and the gray parts to become orange)
Should look like this:
Sesame mayo sauce:
mix sesame oil, mayo, spicy sauce, adn teriyaki sauce in a bowl
when it looks even chill for at least 5 min
add honey as you see fit
While everything chills you can start with the cantalope juice
1 cantalope
1 weird ribboner gadget
cut the cantalope in halves and scrape the fruit with the gadget (do this over a large bowl)
Putting it all together:
Take a tortilla and add some fresh greens to it(this is from Costco and it has red cabbage, lettuce, young spinach, frisee)
put (5) shrimp halves on top
add a small amount of the sesame dressing
take a chilled glass and scoop some of the cantalope ribbons and juice into it
