    OBW"S RECIPES FOR THE BACHELORS

    Each week I will try and post 2 new recipes you can try out...Pretty easy for the unmotivated but sure to impress the ladies...If you try them let me know what ya think..

    Today"s recipe......Chili with just the right kick for the ladies

    1lb Hamburg
    1lb bulk sausage
    1-2 cans(if you like tomatos use 2)14.5 oz diced tomatoes
    2.5 cups(24 oz) tomato juice
    2-8 oz cans tomato sauce
    1-15.5 oz can kidney beans
    1-15.5 oz can chili hot beans
    1-large onion
    2 tsp minced garlic or 4 whole cloves
    1 large dried hot chili pepper(whole)
    1.5 tsp salt
    1 tsp pepper
    1.5 tbls cumin
    1/2 tbls chili powder
    1 tbls paprika
    1 tbls oregano
    1/4 tsp cinnamon

    Brown hamburg,sausage,onion,garlic & chili pepper. Drain and add remaining spices with 1/2 cup tomato juice. Simmer 15-20 mins stirring regularly.

    In a soup pan add remaining ingredients and bring to a slow boil.
    Add meat mixture, cover and simmer till tomatos and beans are soft but not mushy (appox. 1-2 hrs)

    serves 4-6 ppl and takes about 2 1/2 hrs to prepare.

    Roasted Chicken With Rice And Broccoli:

    1- 2-3lb whole chicken
    1/4 cup butter or margarine
    memphis rub (mixture of seasonings recipe below)
    2 cups cooked rice
    1 medium onion (diced)
    1 cup fresh broccoli (chopped)
    1 tbls olive oil

    For best results and flavor brine the chicken in 2 quarts water and 1/4 cup salt and put in fridge for atleast 1 hr but no more then 4hrs. Remove from water after desired time.
    Pat chicken dry with paper towel and put back in fridge. Doing all this after you have cleaned the chicken and the cavity.
    You may choose not to brine and just clean chicken.Pat dry and put in fridge.
    Now prepare your rice with the cooking instructions on bag, equal to 2 cups cooked rice....Set aside.
    Saute onion in 1 tbls olive oil,add broccoli and rice, mix thoroughly.
    Remove chicken from fridge and rub seasoning on meat under the skin and in the cavity.
    Rub the skin down with the butter. Add the rice mixture to the cavity.

    Bake at 350 in a lightly greased baking dish(I use canola spray), 1-11/2 hrs until skin is brown.

    Memphis Rub Seasoning Mix:
    1/4 cup paprika
    1 tbls brown sugar
    1 tbls white sugar
    2 tsp salt
    1 tsp celery salt
    1 tsp black pepper
    1 tsp cayenne pepper
    1 tsp dry mustard
    1 tsp garlic powder
    1 tsp onion powder

    Mix all ingredients and store in an air tight container or jar.
    Will make enough for 4 uses.

    what do you usually have with your chili? i like to make grilled cheese and crackers and more crackers, lol but a friend makes cornbread and i am kinda religious about drinking milk with my chili.

    Your friend is correct...The best is cornbread but I usually make it in a loaf and slice... A little less liquid makes the consistency thicker and loafs up without crumbling...Some ppl like sour creme in it but I dont. I am a little old fashioned with chili and like it thick,spicy and saltines on the side with the cornbread..

    oh, it definitely sounds yummy with the cinnamon and have heard of weirder shit so i'll try it, plus the fact that i don't like my chili so "wangy" and that prolly tones it down a bit. i'm like you in that i like mine thick and spicy and one of my restaurant faves has something in it i can't put my finger on and lol, they're not willing to tell me!!!

    yer right...i use milk instead of water and have grilled cheese. how you make your grilled cheese, Wise...any special tips or tricks you use? i like mine kinda crispy but i just can't seem to do that very well. some folks around here use mayo instead of butter but that don't sound too appetizing to me and i <3 butter so i ain't about to quite it!

    Not too many secrets with grilled cheese that I know....I cook it slow w/ butter and velvetta cheese.Usually ends up crispy outside and soft and runny inside. I also wait maybe 3-5 minutes after its done to give the cheese a chance to harden some.

    P.S. If you like your chili spicy add more of the peppers..That recipe is the toned down version with a small kick.

    Also Slay, Grilled cheese is the shit with tomato soup...Goes together like PB & J
    Tomato soup is best with milk and not water but I am sure you knew that Doll...

    the better cook should be doing the cooking. i just happen to be that person at my house cause the hubby doesn't wait on me to get home to eat sometimes. when he's hungry, he cooks.

    But the problem is if it doesn't cook inside a microwave or is cooked similar to mac and cheese, then there is no hope for me doing it.

    sorry, Dert...that sux big time. That's not as big a problem as it seems...you need someone to teach you the basics and little by little, you could be whipping out the food of the gods and whoever that TV chef is that says "BAM!" all the time...can't quite remember his name

    Triple Layer Enchiladas (Lasagna style)

    1lb ground beef
    18 small corn tortillas
    1-12oz shredded cheddar cheese
    1-15.5 oz refried beans
    1 medium onion(diced)
    1/8 cup taco sauce
    1/8 cup water
    3/4 cup water
    2 tbls cumin
    2 tbls chili powder
    1-tsp season salt
    1/2 tsp pepper
    2 tbls minced garlic
    1-2 cups oil

    Brown ground beef with season salt,pepper and garlic.
    While meat is browning, Fry tortillas in oil, 7 seconds per side....set aside.
    Heat refried beans and thin them with mixture of water and taco sauce.
    Add the 3/4 cup water,cumin and chili powder to the meat after browning,stir.

    Layer 6 tortillas in glass baking dish(or lightly sprayed canola oil in metal baking pan)
    Add meat,beans,cheese and onion...Repeat step

    After 2nd layer is complete, top with remaining tortillas,meat and cheese.

    Bake @ 350, 30 mins or until cheese is melted...Serves 4

    Deviled Eggs

    6-Eggs
    3 tbls miracle whip
    1 tbls mustard
    1- tbls vinegar
    1/2 tsp sugar
    1/8 tsp salt
    dash of pepper

    Bring eggs to a boil, cover,reduce heat to simmer and cook 12 mins.
    Remove eggs and immerse them into cold water(add ice to water optional)
    When eggs are cool peel and slice long ways and remove yokes.
    Mash yokes with fork or chop,add remaining ingredients.
    Stuff egg whites with mixture,Top with paprika.

    Makes 12 deviled eggs.

    Broccoli/Cauliflower Salad

    1 bunch broccoli (chopped)
    1 head cauliflower (chopped)
    1/2 cup onion diced
    1 cup raisins
    1 1/2 cups bacon (approx. 12 pieces) (chopped)
    1 cup sunflower kernels
    1 cup mayonnaise or miracle whip
    1/2 cup sugar
    2 tbls red wine vinegar

    Mix all ingredients,Let stand in fridge 2 hrs stirring twice

    Chocolate Chip Cookies

    1 cup Imperial Margarine
    1 cup white sugar
    1/2 cup brown sugar
    2 eggs
    2 reg size bags choco. chips
    2 cups flour
    1 tsp salt
    1 tsp baking soda
    2 tsp vanilla

    Cream together butter and sugar
    In separate bowl mix rest of dry ingredients
    add eggs to butter mixture
    mix butter and dry ingredients together
    add vanilla
    add chips

    Bake @ 375 until lightly brown
    Makes 3 dozen large cookies (use tbls to drop)

    Somebody sticky this thread. When I get out of this fucking barracks room and into a full kitchen i'm going to use these. I just read the chili recipe and that shit sounds legit.
