Alright, I think we need a good recipe thread to complement our training, or lackoff in my case these days.

Lemon Chicken

Ingredients:
1. Two chicken breasts.
2. Two lemons (one is enough but two for extra flavour)
3. Extra virgin olive oil
4. Black Pepper/herbs
5. Aluminium foil

1. Squeeze half a lemon on a glass tray/pan and complement with a line running through the lenght of olive oil.
2. Take the chicken breasts and soak them in the lemon/oil juice on both sides.
3. With a fork or knife make small incisions in the chiken breasts and squeeze the other half on top.
4. Add some black pepper and herbs to taste. I like to use thyme or rosemary. Basil and oregano work too.
5. Cut the second lemon in thin circles and place on top of the chicken.
6. Cover everthing with the aluminium foil to maximise the flavour and allow the chicken to steam in the sauce.
7. Chuck the whole thing in a preheated oven at maximum heat for around 40 minutes or thoroughly cooked.
8. Enjoy

The lemon sauce will be slightly caramelised and will stop the chicken from drying if you leave it too long in the oven, and the lemon circles will become nice and crispy so you can eat them too.

White Fish a la papillote.

Ingredients
1. White fish. Haddock, plaice, cod or whatever tickles your fancy.
2. Ginger powder
3. Coleman's English Mustard powder
4. Bay leave (not necessary)
5. Aluminium foil
6. Non salted butter

1. Place the fish fillet in a large alumnium foil.
2. Sparkle some ginger and mustard powder on top of the fish and throw the bay leaf in there too.
3. One teaspoon of butter
4. Now the tricky part, take another equally large piece of alumnium foil and wrap the fish in a water tight fashion with your initial foil.
5. Steam the fish for 15 minutes. If you dont have a steamer, just boil some water and put the bag in the boiling water for 15 min.

You can take the butter off the recipe and you will have a virtually fat-free dish which can be complemented with some steamed vegies, however you will sacrifice some quality taste. Also you can be creative by adding herbs or again whatever you like to the recipe. It works for salmon too.
